Walk down any dairy aisle and you will see "A2" on more and more labels. It is not marketing shorthand for organic, and it is not a grade of quality — it describes a protein.

The protein, briefly

About 30% of the protein in cow milk is beta-casein. It comes in two common forms, A1 and A2, separated by a single amino acid. That one difference changes how the protein breaks down during digestion. Milk from indigenous Indian breeds such as Gir and Sahiwal carries only the A2 form. Most high-yield European crossbreeds carry a mix.

Does it matter?

For a lot of people, no — they drink either without noticing. For those who feel heavy or bloated after ordinary milk but are not lactose intolerant, A2 is often easier. That is an observation we hear from customers rather than a medical claim, and it is worth trying a week of it before deciding.

What we do

Our A2 range is single-source: it comes from our own Gir and Sahiwal herds, hand-milked and bottled the same morning. Nothing is pooled with crossbred milk, which is the only way an A2 label means anything.
